Minestrone Soup Recipe

 

Ingredients

  • 3 cups chicken broth
  • 1 (28-ounce) can diced tomatoes
  • 1 (15-ounce) can butter beans, drained
  • 2 carrots, peeled and chopped
  • 1 cup onion, chopped
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 2 bay leaves
  • Salt and ground black pepper
  • 2 cups cooked orzo pasta
  • 2 cups coarsely chopped spinach
  • 4 tablespoons Parmesan or Romano cheese

Directions

In a large soup pot, combine broth, tomatoes, beans, carrots, onion, thyme, basil, bay leaves, and salt and black pepper for taste (about 1/2 teaspoon each). Cook over medium heat until tender, about 20 minutes.

Once the soup is done cooking, add the orzo and spinach. Cover and cook 10 more minutes. Remove bay leaves and season, to taste, with salt and black pepper. Ladle soup into bowls and sprinkle parmesan cheese over top.

Welcome Aboard Gondolas West!

My boyfriend and I decided to do the Gondolas West tour Valentine's Day (ahh how sweet)! We opted for the 10:00AM two-hour cruise because I was hoping to see a manatee or two. Although we ended up not seeing any, I still had a great time. Our tour included two other couples and our tour guide Chris (he is also the owner and operator). Everyone was great! It was a very relaxing coasting along the tranquil waters.

Althought it was a very beautiful day, the boat is fulled shaded (on the top and sides); perfect for any weather. The captain provided water, soda and some deliciously sweet oranges, but you also have the option to bring your own drinks (beer, wine, or champage anyone?) and food (cheese & crackers, sandwiches or a small picnic).

I grew up in Fort Lauderdale and I must say, it was an experience well worth it. Even if your take this tour only once, it is a must do for the tourist and the non-tourist alike. Whether you are looking to shop for a yacht or home, dine on the water, celebrate in an intimate setting, tour the area or simply relax, Gondolas West will accommodate you to your travel destination in style and comfort.
